Ginger cake

After a nice day earlier in the week, it’s back to rain, as if it’s April showers,  but it’s now May. I have been busy doing various things, on Friday I had two friends, coming over in the afternoon. One asked for the Norwegian rhubarb cake and suggested a different topping from just plain sugar. The topping came from a muffin recipe , that she has made me, which is one part olive oil, three parts sugar. You mix them up, let the sugar slurp up the oil then sprinkle the mixture onto the cake. It then goes in the oven as usual. The odd thing, was the cake took a longer to bake than usual, and it had a sort of crispy texture which was what my friend was after. I was a bit worried about it, so I decided to make a Mary Berry Spicy Ginger ring cake, with stem ginger in the cake and also decorated on top of the icing. This cake came out well and a taste teste for both made me think they were suitable for human consumption.


My allotment coworker, the ninety year old neighbour gave me some Butter Nut Squash seeds, I wasn’t optimistic so I put two in each pot, and they all germinated. I gave two to my physio, one goes to one of the friends who came today, I keep the other for our plot.


It just so happens that this neighbour rang later on, said the French climbing beans were ready, and I said weather permitting I will put them in asap. I told her I bought a courgette plant from the TRHA store last Sunday and that I also have a Melon, Cucumber and Chilli in the greenhouse. I think if it dries out next week I might do a bit of weeding at the allotment, as it looked liked lots of little weed seedlings were appearing last time I went there. I went to the physio, I have been to the gym most days this week. The amount of movement and stiffness in the ankle gradually gets worse after visiting the physio and after a visit, it’s like it used to be before the accident. The physio said, it’s the muscles plus also the tendons that are weak, after that prolonged period of inactivity and that’s what’s giving me that sort of ankle collar feeling. There is nothing to do but exercise and keep it moving. Tomorrow I am dog sitting at a house next door to the Cosy Nook, I am meeting at least one friend there, I don’t have any specific plans for the day, except walk the dog around the village, and look into a couple of things that I need to do for the TRHA. these relate to Store Maintenance.
